Freezing tuna and vinegared rice (shari) for sushi (rapid freezing demo)

Today, we had a customer who runs a sushi restaurant visit us, and we performed rapid freezing demonstration.

While we were comparing and considering other rapid freezer, we chose a liquid freezer because of its superior installation cost (we were told it was a realistic price), and we went to a demonstration to check its freezing performance. Thank you for coming.

When it comes to freezing tuna, in fact, even tuna shops (tuna experts) are so confident that they can't tell if it's fresh or thawed!

(My passion for tuna is so strong that I have developed even more sophisticated equipment specifically for tuna!)

The ``tuna'' blocks that you brought with you were frozen and taken home, but we also had to thaw and sample the ``tuna'' that had been stored frozen as a separate sample (purchased more than six months ago and frozen in a liquid freezer). We did it on the spot.

Thaw about 80% in a hot water bath, then let the core thaw naturally.

The tuna was thawed at just the right time and tested for texture and taste without dipping it in soy sauce.

Of course, we sampled the tuna because we were confident, but the customers were surprised by the taste and elasticity of the tuna, which was just like raw tuna!

This was also a professional tasting, so I was a little nervous, but I was relieved by the results.

The customer said that he just purchased a few tuna from the market the other day.

After seeing the liquid freezing machine, we are happy to say, ``If I had had this, I could have bought a few more bottles.''

The main reason for introducing it is said to be the development of new frozen sushi products, but it also seems to be very effective in reducing purchasing costs!
