Freezing osechi (rapid freezing demo)

Today, we held a freezing demonstration for customers selling osechi.

Our customer is a famous store that makes and sells a considerable number of osechi every year.

Currently, they only need refrigeration, so during the peak period before the New Year, they use an army of people to prepare and ship them all at once.

It is said that the sale of frozen osechi has been researched for some time, but they gave up on it because the taste and appearance did not pass the mark with regular rapid freezing, so this is the first time they have heard of our freezing machine. We first tested whether this freeze could clear these issues.

Freeze New Year's food

This time, since it is not the season, we decided to test a different product that is similar to New Year's dishes.

In addition, in response to their desire to sample the food on the spot, we made the following arrangements.

Please arrive the day before and mail 2 sets to the demo venue.
・Freeze the set as soon as it arrives, then transfer it to the refrigerator overnight to thaw naturally.
・Keep 1 set refrigerated (no freezing)

First of all, regarding the appearance, as you can see in the photo, I couldn't tell whether it was refrigerated or frozen. There were issues with the misalignment of the arrangement and the brightness of the food when compared to freshly made food, but it seems that these can be improved through future research.

As for the taste, we also received a passing score. I had some issues with the taste of the pumpkin and a few other items, but overall the results seemed to be better than expected.

This time, the freezing test was carried out using a Styrofoam container that was degassed and packed, so if you make some changes to the container, the freezing speed will be much faster (the freezing time that used to take about 50 minutes is expected to be shortened to about 25 minutes). , there is still room for improvement in the quality of ingredients due to rapid freezing.

When I explained this to them, they said, ``I see!'' and they were convinced, so we decided to proceed with product development in stages toward the end of this year, along with container research.

Osechi cuisine, which decorates the dining table at the beginning of the year and brings happiness to the family, is not only about the taste, but also about the gorgeous appearance and sense of fulfillment. In order to realize our customers' wishes and commitments, there are some issues that we need to consider, but we will work together to overcome them one by one.

In addition, this time we saw an actual freezing test, and were able to experience the freezing ability of our freezing machine.We were able to use the freezing ability of our freezing machines to help us freeze other products sold at our affiliated stores, manage food procurement costs, expand overseas exports, etc. It seems that various plans using technology have been created, and if possible, they want to install one and try various things!
