[Commercial rapid freezer] Explaining the features, size, and price of Panasonic rapid freezing

Some people looking for rapid freezing don't know which brand to buy, so they sell refrigerators and freezers instead. People who are searching for rapid freezing at major home appliance manufacturers such as Panasonic I'm sure there are some as well.

Due to the spread of the new coronavirus, sales styles are changing in various industries. In the food industry in particular, as the number of customers coming to stores has decreased and it has become difficult to sell in stores, an increasing number of stores are starting frozen products for online sales.

For this reason, more and more people are becoming interested in rapid freezing can maintain high quality even when frozen.

In recent years, various manufacturers, including Panasonic and Toshiba, have begun selling freezers with rapid freezing functions.
In particular, Panasonic develops and sells rapid freezing for home and commercial use. Some of you may have heard of Panasonic's product called Hayauma, a refrigerator equipped with home-use rapid freezing technology.

Commercial machines with rapid freezing technology include not only rapid freezing, but also rapid freezer, quick freezers, and shock freezers. All of them refer to the same rapid freezer, but each has its own unique features.

This time, we will introduce the functions, size, price, etc. of Panasonic's commercial rapid freezing rapid freezing is famous for its home appliances, as well as introduce rapid freezing from other manufacturers.

What is rapid freezing?

What is rapid freezing?

There is a difference in the speed of freezing between rapid freezing and regular freezing.
rapid freezing allows food to be frozen without destroying its cells due to its fast freezing speed. rapid freezing makes it possible to achieve high quality freezing.

By using rapid freezing, it is possible to recreate the freshly prepared state after thawing, which can solve the problems and problems of companies that handle food, such as restaurants and food manufacturers.
Machines with this type of rapid freezing function are called rapid freezing, and are also called rapid freezer, quick freeze machines, quick freezers, flash freezers, and shock freezers.

Here, we will introduce how to use rapid freezing.

First of all, in stores where there is a problem of labor shortages, by introducing rapid freezing, it becomes possible to prepare and manufacture products in the spare time, leading to shorter working hours and a reduction in the burden on employees.
For example, by preparing food in advance even during busy times such as lunchtime, you can quickly provide products and serve a large number of customers. In this way, the introduction of rapid freezing can also lead to an increase in store sales.

The introduction of rapid freezing also contributes to cost reduction.

For example, some bento shops are busy preparing food from early in the morning every day. Because the work is difficult, there may be a shortage of manpower, and because the work is done early in the morning, labor costs may be high.
However, by installing rapid freezing, you can do the preparation work that used to be done early every morning in the evening of the previous day or in your free time, and then thaw the frozen food on the morning of the same day.

In this way, rapid freezing technology can solve various problems.

Some Panasonic products also use this type of rapid freezing technology, so we will introduce them along with comparison results with other manufacturers' rapid freezing.

About Panasonic rapid freezing

panasonic

Panasonic isWe are famous for household refrigerators, televisions, air conditioners, etc., but we also sell rapid freezer. Panasonic's rapid freezing uses cold air of -35℃ to quickly lower the temperature of food and freeze it.

Panasonic also sells a product called Blast Chiller & Freezer.

In addition to rapid freezing, this product also features three types of cooling modes and an "operation control mode" that automatically switches between cooling rotation and cold storage operation.

There are three types of cooling modes: soft cooling, hard cooling, and quick freezing. The cooling mode is divided into three types so that each food can be cooled appropriately.

The soft cooling function is suitable for freezing delicate and fragile foods such as puddings and vegetables, the hard cooling function is suitable for cooling meat, and the quick freezing function is suitable for freezing freshly cooked foods. One of the features of Panasonic's rapid freezing rapid freezing that they are equipped with three types of cooling modes.

This product is also equipped with "NanoE". After one day of use, you can clean it according to the instructions in the manual, and then release "NanoE" to remove bacteria inside the refrigerator.
This blast chiller and freezer is available in three sizes with cooling capacities of 15kg, 17.5kg, and 30kg. The price is 1,960,000 yen for the smallest model with a cooling capacity of 15 kg, and the price increases as the cooling capacity increases.

These Panasonic freezers are rapid freezing. A shock freezer is a type of freezer that can contain food that has already lost its heat and can be frozen to a temperature of approximately -20°C.

Shock freezers are said to be able to pass temperatures from -1°C to -5°C in 30 minutes, which are said to degrade food quality and texture. The shorter the time it takes for food to pass through this temperature range of -1°C to -5°C during freezing, the better the quality of the food can be maintained.

Next, we will introduce a special rapid freezing that can achieve higher quality freezing than a shock freezer.

Introduction to special rapid freezing ~ Differences from Panasonic rapid freezing ~

special rapid freezing

In addition to Panasonic, other manufacturers also sell special rapid freezing. Among them, this time we will introduce Daybreak's Art Lock Freezer and Yoneda Koki's Rejoice Freezer.

ARTLOCK Freezer

Daybreak's Art Lock Freezer is equipped with a micro-wind system and a smart freeze system.
Compared to a typical rapid freezing, where cold air flows in one direction, the Artlock Freezer allows food to be frozen all at once by applying cold air evenly to the food. This means it takes less time to freeze.

It is said that the Artlock Freezer can freeze food in 30 minutes, whereas it takes 50 minutes to freeze it with a shock freezer.

Moreover, the cool, humid air prevents food from drying out. Typical rapid freezing require frequent defrosting because cold air flows in one direction.
On the other hand, Artlock freezers circulate cold air inside the refrigerator and do not require frequent defrosting, so they can operate continuously and increase work efficiency.

Artlock freezers come in a variety of sizes, from small to large.

Yoneda Koki's Rejoice Freezer is different from the refrigerators explained so far because it freezes liquid. This liquid is alcohol that has been cooled to -35℃. Therefore, the freezing time is very short.
Results show that food that took 50 minutes to freeze using the shock freezer mentioned earlier could be frozen in 20 minutes using Rejoice.

A feature of the Rejoice Freezer is that it can freeze food evenly, just like the Artlock Freezer. It depends on the type of food, but when using a Rejoice Freezer, the food comes into direct contact with liquid alcohol, so it must be vacuum packed before being placed in the Rejoice Freezer.

Why is vacuum packaging better than regular packaging? This is because vacuuming prevents food from oxidizing. Even if you do rapid freezing, if air gets into the food, it will oxidize and the quality will deteriorate.
Therefore, for foods that are difficult to vacuum pack, such as freshly prepared foods or foods that are extremely soft and crumble, the Artlock Freezer, which can be frozen without packaging, is suitable instead of the Rejoice Freezer.

Conclusion

We introduced Panasonic's rapid freezing and compared it with other manufacturers' rapid freezing.

There are various types of rapid freezing, each with their own characteristics. The optimal rapid freezing differs depending on the size of the food and store, as performance, price, power usage, etc. vary. Therefore, if you are considering installing rapid freezing, we recommend that you try multiple rapid freezing.

At our company, we conduct demonstration tests where you can actually try freezing food using several rapid freezing that we have carefully selected based on our many years of experience.

Please feel free to contact us if you are interested in demo testing, detailed information such as the size and price of rapid freezer such as Artlock Freezer and Rejoice Freezer. We look forward to hearing from you by email or phone.
