Roasted sweet potatoes become sticky when frozen

Background of considering the introduction of rapid freezer

Beniharuka's roasted sweet potatoes, which have a high sugar content, became sticky when frozen, which was a problem.

Our company roasted Beniharuka sweet potatoes, frozen them, and shipped them to consumer cooperatives and other organizations as snack potatoes.

However, slow freezing inevitably produces drips, and baked sweet potatoes with a sugar content of 40 degrees become sticky after thawing.

I was looking for ways to reduce drips and stickiness, and while doing so, I found Daybreak's website and contacted them.

They answered all my inquiries thoroughly and considered the cost-effectiveness as well. We actually tested it and found no problems with the quality, so we decided to install it.

After that, we took on the challenge of applying for a manufacturing subsidy, which was successfully adopted, and we were able to install rapid freezer.

Effects after introducing rapid freezer

We are rapidly freezing "Ikinari Dango", whose shipments have increased due to the Kumamoto earthquake!

After installing rapid freezer, we were unable to harvest Beniharuka due to the Kumamoto earthquake, and unfortunately we are no longer using it to freeze snack potatoes.

After the earthquake, we held Kumamoto fairs across the country to support recovery efforts, and received many inquiries about Kumamoto's specialty, ``Ikinari Dango.''

``Ikinari Dango'' is shipped after slow freezing, but when the shipment volume was large, slow freezing alone was not enough to ship in time.

In such cases, using rapid freezer can quickly freeze the food, which greatly speeds up the process, which is helpful.

Future outlook

This year, we will be shipping high-quality Beniharuka roasted sweet potatoes!

The first sweet potatoes after the earthquake will be harvested in August of this year. The sweet potatoes will be roasted and shipped after they have been left to rest for a few months, so I am thinking of using rapid freezer at that time.

I'm looking forward to shipping snack potatoes with reduced drip and improved quality.

Why I consulted Daybreak and what was good about it

He explained the system thoroughly and thoroughly, so I was able to resolve any questions I had and consider implementing the system.

At first, I didn't really understand rapid freezing works, but Mr. Daybreak kindly and thoroughly explained it to me.

We also cooperated with the manufacturer, and since Daybreak's test room was located far away from Tokyo, we were able to conduct the test in Shimonoseki, where there is a manufacturer of rapid freezer relatively nearby.

It was also helpful that I was able to ask Daybreak to support me with manufacturing subsidies.
