Freezing ohagi and dango (rapid freezing demo)

This time, we did a demonstration of freezing ohagi and dango.
Compared to regular rapid freezing prevents the surface of Japanese sweets from drying out and preserves the flavor and sweetness for a longer period of time, so we recommend it to our customers!

The customer is currently only selling over-the-counter, but they are considering reforming their sales methods, such as installing rapid freezer to prepare the product in their spare time, and mail order, and they came to do a freezing test this time.

Additionally, there is a limit to the amount of Japanese sweets such as ohagi and dango that can be made each day. The number of items sold varies depending on the day, and the purchase rate also changes depending on whether or not the item is in the store at the time, so they were interested in rapid freezing to increase production volume. The customer was looking forward to this demo test because the introduction of rapid freezer will allow them to prepare food anytime during their spare time, and also allow them to increase the number of sales according to the sales that day. I received it.

On the day of the event, participants brought snacks such as ohagi (red bean paste and sesame seeds) and mitarashi dango.
The ohagi I received this time was a large ohagi with a diameter of 9 cm and 200 g.

We freeze mitarashi dango in two types: one in which the sauce is already applied to the dango before freezing, and the other in which the sauce and dango are frozen separately so that you can see if there is a difference in quality after thawing. I did it.

In this freezing test, everything was frozen in less than an hour.
The dumplings etc. froze in just 30 minutes, and although the larger ohagi took a little longer, they all became solid within an hour.
