This time, we held a demonstration of freezing Japanese sweets.

 

The customer is a certain restaurant in Tokyo that is famous for having difficulty getting reservations, and they were considering offering new Japanese sweets at the store, and they wanted to use rapid freezing for that purpose, so we conducted this freezing test. .

The guest was a famous chef who has been featured in many media outlets, and we were very excited to help out.

When Japanese sweets are rapid freezing, the surface does not dry out compared to regular freezing, and the flavor and sweetness can be preserved for a long period of time, so this is one of the products that many customers use.

For Re-Joice Freezer, which uses liquid freezing, the food is vacuum-packed from the top and then placed into the machine.

In addition, in the case of Japanese sweets, it may be better to freeze them in the air or in a bag or case to prevent surface drying and flavor deterioration, so we recommended testing that pattern as well.

In this freezing test, it was rapid freezing to -20℃ in just 30 minutes.

Items placed in a case take a little longer because there is an air layer, but they become solid faster than in a shock freezer.
