Today, we held a freezing demonstration for a customer who operates a ramen chain.

The customer wanted to sell the gyoza that they serve at the store in Hong Kong, so he wanted to freeze them in Japan and bring them to Hong Kong.
Currently, they are freezing it in a shock freezer at -35 degrees, but the skin and taste are not good, so they came to our company in search of a good way to freeze it.

Apparently, they considered building a factory locally to produce it, but considering the capital investment, it would be better to freeze the skin and filling in Japan and bring it to Hong Kong, which would be more cost-effective. .

When freezing with a liquid freezer, you can expect the best results, especially when it comes to freezing bean paste!

Place this in a liquid freezer and let it sink.

Gyoza skins are very thin, so in this case, they would freeze completely in just a few minutes.
The filling also takes about 15 minutes.
Gyoza with the top sealed have air trapped inside, so it takes a little longer, but it still takes about 30 minutes.

The person in charge of manufacturing was there this time, and he was very satisfied with the quality of rapid freezing.

Since there were no problems with freezing the dumplings, we considered a medium-sized machine and installed it at a later date. Even after the introduction, sales seem to be steadily increasing.

There were also other companies that installed the machine to rapid freezing and sell dumplings after they were baked.
