Freezing liver (rapid freezing demo)

This time, we did a demonstration of freezing pork liver.

 

The customer was looking for rapid freezer could maintain freshness for a longer period of time than regular refrigeration for a certain research purpose.

Normally, raw liver is used in the research and experiments, but since the experiments are repeated over a long period of time, it is necessary to preserve the liver, and if it is stored in regular refrigeration, it deteriorates quickly. I was told that I couldn't use it much because it would lose its freshness.

If it was proven that rapid freezing could maintain the same freshness as raw food for a long period of time, it could be used in this research, so they wanted to install the machine.

This time, it is not edible, but from the perspective of maintaining freshness, we have a lot of experience with liver for yakiniku, etc., so we confidently introduced it to you and decided to conduct a freezing test!

On the morning of the day, the customer brought in fresh liver that had just been caught at a slaughterhouse near our test room, and the test was conducted by cutting it on the spot.

It's rare to see a whole liver before it's processed.

Since we will be testing two models, an "air freezing type" and a "liquid freezing type," we will divide this into three equal parts and pack each part to ensure the same conditions.

One lever was over 3cm thick!

After freezing the liver

Because the liver was packed well and was thick, it took about 40 minutes to completely freeze it.

Even so, customers were surprised because it was much faster than regular refrigeration!

It's so clicky that it makes a metallic sound!

Results after defrosting the liver

After the freezing test, we had them take them home and thaw them for evaluation two weeks later.

This time, we tested all models, and all of them showed overwhelmingly better quality than regular refrigeration.

However, we found that there were differences in quality and freshness between rapid freezer, so in order to achieve the highest level of freezing, we immediately requested a second test and are planning to conduct additional verification.
