Freezing horse sashimi (rapid freezing demonstration)

This time, we conducted a demonstration for a customer in Aomori.

 

The customer came to this freezing test because they wanted high-quality frozen products that could overcome hygiene issues and still be delicious even when eaten raw after thawing.

Since 2011, horse meat has been required to be frozen at -20℃ for 48 hours to prevent food poisoning.

In rare cases, horse meat can cause mild food poisoning, which is caused by a parasite called Sarcocystis fairy. Parasites can be prevented by freezing horse sashimi.

However, if you freeze horse sashimi using the normal method, a lot of drips will come out and the quality will deteriorate.

For this reason, it is true that there is a strong resistance to freezing in the local areas where they are used to eating raw food, with some saying that the flavor deteriorates when frozen.

Due to mandatory freezing, producers are now able to deliver products to consumers while maintaining safety, but on the other hand, more and more people are having trouble with drips and discoloration (shininess) after thawing.

However, freezing with rapid freezer can solve these problems, allowing consumers to enjoy fresh and delicious horse meat at any time!

This time, we conducted a comparison test using rapid freezer (air freezer, liquid freezer (alcohol freezer)) that we handle.

Horse meat thawing results

As a result of comparing gloss, texture, taste, etc., all models showed overwhelmingly better quality than regular frozen products.

However, even among rapid freezer, there are compatibility with the ingredients, and the results showed that the optimal freezer differs depending on the three types of parts.

Our customers were very surprised at the difference in compatibility between different freezers!
