Freezing whipped cream (rapid freezing demo)

Today, a candy manufacturer that handles large quantities of whipped cream visited our test room and gave a demonstration of rapid freezing.

 

It seems that they are currently freezing their products using a spiral freezer, but they came to the exhibit in search of higher quality freezing and bulk freezing processing.

With our rapid freezer, the cream does not undergo syneresis and can achieve much higher quality freezing than ordinary spiral freezers!

Furthermore, because it is rapid, the freezing speed is also faster, making it possible to process larger quantities than current spiral freezers.

The following two patterns are used for frozen samples.

・Whipped cream in a bag
・Naked state with whipped cream served on the tray

This is then subjected to a freezing test using rapid freezer in our test room.

This time, I also tried the cream in its naked state, so I used an air blast type rapid freezer.

The freezing time this time was around 40 minutes.
It has become a crunchy whipped cream!

Our customers were surprised at the difference in freezing speed between shock freezers and spiral freezers!

The two patterns mentioned above that were frozen using each machine will be taken home and brought to a research institute where they will be analyzed in detail, including the differences in ice crystals.
