Freezing natto (rapid freezing demo)

Today we had a demonstration of freezing natto.
To tell you the results, we succeeded in freezing natto which was overwhelmingly delicious!
A must-see for anyone who sells natto or who loves natto!

 

I believe there are two major benefits to freezing natto.

・You will be able to stock up
・Delicious natto can be delivered overseas
Natto has a short expiration date, and wives at home cannot eat natto every morning unless they go and buy more each time.
By freezing natto using rapid freezing freezing and selling it in large quantities, it becomes possible to deliver a large amount of natto to households in a delicious state.
 

In addition, natto sold overseas is exported after slow freezing.
By installing rapid freezer, it will be possible to sell delicious natto overseas.

Freezing natto

This time, we conducted a comparison test using a general refrigerator and rapid freezer (air freezing type, liquid freezing type) that we handle.

The biggest advantage of our test room is that you can try out rapid freezer in the same environment all at once!

This is the regular natto that you often find in supermarkets.
This natto will be frozen using four types of freezers.

This time, I froze all four models with their lids on.

*This time, the freezing test was done with the lid on, but if you change the container without a lid, the freezing speed will be much faster, and there is still room for further improvement in quality due to rapid freezing. This also goes well with the ingredients.

It was rapid freezing to-18℃ in just 20 minutes.
Much faster than regular freezing!

Here we introduce one frozen natto recipe!

[Frozen natto fried with shiso]
・ Cut the frozen natto into quarters with a knife.
・Mix flour, water, and green seaweed to make batter.
・Place the shiso leaves with cut natto and roll them up (close the edges with batter)
- Lightly coat the whole thing with batter and fry it in oil.

Thawing results of frozen natto

Thaw in the refrigerator for 7 hours.

*Number of mixing → 50 times

All results showed that the quality was overwhelmingly better than that of regular frozen products. (flavor, stickiness, texture, etc.)
However, even rapid freezing products are compatible with food, so there are differences in quality.
