Freezing beef (rapid freezing demo)

Today, we demonstrated freezing a block of beef.

The customer is currently freezing a large amount of block meat using slow freezing, and the loss of meat due to dripping is severe, which is having a significant impact on wholesale prices.

The intention was to use rapid freezing to suppress drips as much as possible and reduce loss of flavor.

First, in order to measure how much drip will flow out after freezing and thawing, measure the weight of the block of meat before freezing.

The 10cm thick block of meat was rather large for a demonstration, but it became firm in about an hour.

If I slowly freeze this, I don't know if it will freeze overnight even if it takes overnight.

Customers were surprised at the speed of freezing.

The reason why the surface appears white is because the freezing speed is so fast that the water on the surface freezes before it can escape.
This can also be said to be a major feature of quick freezing that rapid freezing does not have.

This time, the customer had some free time, so we thawed it on the spot and measured the amount of dripping.

After thawing

The weight of the block of meat after thawing is "909.0g".

If you compare the weight with the weight before freezing, you can see that the weight was exactly the same up to a single comma!

This shows that the drip after freezing is less than 0.1%!

The customer was surprised to see that it was in such a raw state that he decided to purchase the machine on the spot.

On the other hand, we were surprised at how quickly our customers made decisions.
