Freezing raw noodles (ramen) (rapid freezing demo)

Today, we did a demonstration of freezing raw noodles (ramen).

 

This customer currently operates nearly 40 ramen shops and makes ramen using fresh noodles, but slow freezing causes the noodles to break into pieces, so he wanted to solve this problem by rapid freezing.

We are already producing 1 ton per day, and if we can achieve this, we will open more stores, and we are also considering wholesale and mail order to major supermarkets.

Since it is a local ramen chain that is one of our members, we would like to cooperate with you and help you!

Freezing raw noodles

This time, I decided to try two ways: raw noodles and boiled noodles.

Among our rapid freezer, we will be demonstrating an air freezing type rapid freezer has a good track record for noodles.

Freeze raw noodles in the bag.
Since there is air in the bag, it is expected that it will take a little longer than freezing the bag naked.
(So, in general, it is recommended to freeze naked!)

As for the boiled noodles, we boiled them and froze them naked, and then we put them in containers designed to be frozen in their shape so that they would be easier to cook after thawing.

After freezing raw noodles

Boiled noodles were frozen immediately after boiling, so they were cooled and frozen from 60℃ to -40℃ in one go, but with our rapid freezer, it takes only 20 minutes to freeze the naked noodles. If you put it in a container, it will become hard in less than 35 minutes.

Needless to say, raw noodles that were not boiled were completely frozen in a much shorter amount of time.

Since the customer had some free time, he cooked ramen on the spot using frozen raw noodles.
