Freezing of Pacific saury (rapid freezing demonstration)

Today, we conducted rapid freezing demonstration for a customer who runs a guest house in Hokkaido.

The customer's hometown is a place where all kinds of seafood can be caught, including saury, and the menu includes fresh, locally caught seafood.

This time, the customer came to our company with the idea of planning a new product using rapid freezing and providing even better products to customers.

First, we conducted a demonstration using saury and other seafood to check the freshness of our rapid freezer.

I received a saury 3 days after it was caught.
It's been 3 days, but under normal distribution, this is about the time we would buy it at a store.
You can still see how fresh it is.

After setting it, it froze to -18℃ in about 30 minutes and became hard!

In addition, we had whitebait, milt, fillet, shellfish, etc., so we conducted a test with them.

After freezing, only one of the saury fish was thawed on the spot, and the customers themselves cut it up and tasted it as sashimi. By tasting it as sashimi right away, I was able to fully experience the power of rapid freezing on the spot, and I was left with a very satisfied impression.

We also sampled the fresh saury sashimi, and it was truly exceptional! At a later date, we plan to thaw and evaluate the remaining portions and move on to the next step.
