Frozen foods made using rapid freezing technology are surprisingly widely available, even if you don't realize it.
Using special rapid freezing techniques, they offer a variety of products that you can actually order and eat, such as prawns, oysters, and puffer fish sashimi, claiming that you can "enjoy the taste of freshly caught local produce at your dinner table."
Additionally, stores that offer a large number of menu items handle a large number of ingredients, which places a heavy burden on inventory management and preparation work, so large food and beverage chains, restaurant chains, and supermarkets that operate multiple stores are also increasingly introducing rapid freezer.

In addition, although they are not so-called frozen foods, quick-freezing technology is used for tempering (a method of freezing the surface) when slicing ham or meat for shabu-shabu, and in fisheries and livestock production sites. Opportunities to eat foods that utilize rapid freezing technology are likely to increase in the future.

Awareness of rapid freezing foods is low

On the other hand, while interest in and demand for tasty, easy-to-prepare frozen foods is increasing among general consumers, awareness of rapid freezing technology itself is still low, which is a challenge for the future.
Looking at it from another perspective, the frozen food market is expanding both domestically and internationally, so rapid freezing foods can be said to be a market that is attracting attention because they allow for overwhelming differentiation in terms of quality.
