About wild vegetables
Wild vegetables are plants that grow wild in the mountains, and you can pick a variety of wild plants depending on the season.

[Kogomi]
Kogomi is in season from April to May and is rich in dietary fiber and carotene, as well as vitamin C and vitamin E, which have strong antioxidant properties.
It can be used in a variety of dishes such as aemono, soup, and tempura.
[Warabi]
Warabi is in season from April to May and contains vitamin E. If you want to eat it with a strong lye, you will need to remove the lye, but it is a delicious ingredient when used in things like ohitashi and tempura.
[Cod bud]
The best season for cod sprouts is from April to May for wild cod sprouts, and from February to March for grown cod sprouts.
Cod sprouts are rich in minerals such as potassium, magnesium, and iron, and also contain a lot of carotene.
Tempura is a typical dish, but it can also be enjoyed deliciously as a seasoned dish, ohitashi, or as an ingredient in pasta.
Preservation of wild vegetables
Wild vegetables are most delicious when freshly picked, and can be stored in the refrigerator for about 2 to 3 days.
When storing them, wrap them in newspaper and store them in the vegetable drawer of your refrigerator without washing them.
If you want to store it for a long time, it is common to process it by salting it or boiling it in water.
Although it was not very common until now, by using rapid freezer,
