Freezing of flounder, redfish, rockfish, yellowtail grouper, and prickly shrimp (rapid freezing demonstration)

This time, we conducted a demonstration for a customer in Fukuoka.

 

With the motto of "enriching fishermen," they would like to sell fresh frozen fish from Kyushu directly to restaurants in the Kanto region. They also had their eyes on the world!

Before freezing

Preparation

I will cut

・Pheasant grouper, rockfish → remain as round
・Prickly pear shrimp → head removed
・Akamutsu → cut in half
・Divided flounder into engawa, liver, backbone, and fillets.

*Make sure to remove as much air as possible to prevent oxidation and freezer burn.
When doing so, be careful not to crush the body.

Then feed it into the machine!

After freezing

It was rapid freezing to -18℃ in just 20 minutes.
It clicks in no time!

The colors are bright and fresh. Your eyes look like jewels.

The liver is also nicely crunchy.

When the customer saw the product after freezing, he was very surprised and said, ` `It's not the same color as frozen.'' Part of the fun is seeing their surprised faces!

After freezing, the surface will appear cloudy, but once thawed, the cloudiness will disappear and return to its pre-frozen state.

After the freeze test, we sent it back to you by mail. The customer will receive a thawing evaluation at a later date.

Freezing fresh fish can maintain its freshness for a long period of time, just like fresh fish, so it is not affected by the amount of fish caught and can provide a stable supply outside of the peak season.
