Cooling pita bread (rapid cooling demo)

Today, we demonstrated rapid cooling for a customer who manufactures pita bread.

Originally, we received inquiries from customers who wanted to improve the flavor after thawing, as they were currently slow-frozen, and also because they wanted to increase the freezing speed and increase production by several times.

However, it seems that they were thinking of using rapid freezing to increase the amount frozen and increase production, but it turned out that there was a huge time loss because they had to cool down to a certain degree from the hot state after production and then freeze it naked. Ta.

In that case, we propose that rapid cooling from a hot state, packaging into bags, and then freezing would shorten the overall time from manufacturing to freezing, improve efficiency, and increase production. I was allowed to.

Therefore, we demonstrated rapid cooling this time.

Freshly made, hot pita bread. We conducted the test next to the factory, so the temperature was 80 degrees Celsius just after it was made.

It takes less than 10 minutes to quickly cool down from 80℃ to 5℃.
It's hard to see in the photo, but things that were too hot to touch before I put them in have become very cold.

We are considering incorporating rapid cooling in the middle of the line, so we assumed that pita bread would be coming down from the production line, and we also tested it when two pieces were stacked one on top of the other.
It took about 15 minutes for the temperature to drop to around 5℃!

Sangyak cooling

Along with pita bread, the customer also manufactures sangyak, and we conducted a test on this as well.

Just like pita bread, we succeeded in cooling it down to 10℃ in about 5 minutes!

From the test results

Our customers were very surprised at the rapid cooling speed!

The customers were satisfied that this would allow them to increase production by four to six times the current level and solve the cooling and freezing issues.
