Advantages of freezing kiriboshi daikon radish

When you want to save leftover or uneaten kiriboshi daikon radish, storing it at room temperature or refrigerating it will shorten its shelf life.

The key is to freeze it with as little moisture as possible.

Freezing method after reconstitution with water

1) Soak the kiriboshi daikon radish in water for the specified amount of time and gently squeeze out the moisture.
2) Wrap the amount you will use in plastic wrap. Place it on a metal tray and place it in the freezer.

If you don't need to divide it into smaller portions, you can just put it in an airtight container (such as a Ziploc bag).
3) Once 2) is frozen, transfer it to an airtight container to prevent air from entering as much as possible and store it in the freezer again.

How to freeze boiled food

1) Remove the heat from the boiled kiriboshi daikon.
2) Once it has cooled completely, wrap it in plastic wrap until you have enough of the simmered kiriboshi daikon to use at one time.

- Metal trays have good thermal conductivity, allowing heat to quickly escape from the material. Therefore, it can be frozen more quickly and retains its deliciousness.

◆ Before returning: 6 months to 1 year at room temperature and unopened
After opening, store in a sealed container and refrigerate to avoid exposure to air. The shelf life is six months to one year, the same as when unopened.

◆After returning
Kiriboshi daikon radish cannot be stored at room temperature before it is cooked.
Stores in the refrigerator for about 1 day. If frozen, it will last about 2 weeks.

◆In the case of boiled food
Stores in the refrigerator for about 4 to 5 days. If frozen, it will last approximately 2 weeks to 1 month.

How to thaw kiriboshi daikon radish

The basic method for defrosting kiriboshi daikon is ``refrigerating.'' You can eat it cold, so there is no problem, and you can avoid losing the taste.

Move it to the refrigerator the day before eating. You can also use it frozen for lunch boxes. It also helps prevent other side dishes from spoiling.

Of course, if you want to thaw it quickly, you can also heat it in the microwave to thaw it.

If you are concerned about the storage condition, such as when the storage period has become too long, you can reheat it in a pot or microwave after thawing it.

Did you know that kiriboshi radish is a highly nutritious food? In fact, it has higher nutritional value than regular radish, and contains 20 times more calcium than radish.

Radish root with skin (raw) contains nutrients such as 24 mg of calcium, 230 mg of potassium, 34 μg (micrograms) of folic acid, and 1.4 g of dietary fiber (per 100 g of edible portion). On the other hand, if you look at the nutrients in the same weight of kiriboshi radish, you will find that it contains 500 mg of calcium, 3500 mg of potassium, 210 μg of folic acid, and 21.3 g of dietary fiber, which is more than the root (raw).
