Freezing of fried foods and skewers (rapid freezing demonstration)

This time, we demonstrated freezing fried foods and skewers.

The customer had a need for frozen fries due to oil loss, etc., and we conducted this freezing test to achieve high quality frozen fries using rapid freezing.

One of the benefits of rapid freezer, which even our customers are very surprised by, is that fried foods can be placed into the machine while still piping hot.

In a regular freezer, if you put the food inside while still piping hot, the temperature inside will naturally rise, causing frost to form and the frozen items inside to melt.

On the other hand, rapid freezer does not cause the temperature inside the refrigerator to rise, and can quickly bring piping hot fried food down to the negative temperature range.

In other words, you can keep the freshly fried state as it is, and after thawing it, you can return it to the freshly fried state by heating it in the oven for a little while!

On the day of the event, we prepared squid, onions, eggplant, pumpkin, shiitake mushrooms, asparagus meat rolls, beef, and quail eggs for skewering.
For deep-frying, squid rings, chicken fillet, pork fillet, lotus roots, etc.

Since it is a deep-fried product, it is difficult to pack it, so we did not use liquid freezing this time, but instead tested it in an air-freezing type rapid freezer.

Immediately put the freshly fried piping hot food into rapid freezer!

In just 40 minutes, the freshly fried food was rapid freezing to -20°C from over 100°C.
It's a little hard to tell from the photo, but it's frozen solid.

It's so strange that fried food that was so piping hot can be completely frozen!

After the freeze test, we sent it back to you by mail.

The customer was scheduled to thaw and evaluate the product in a few days, but we also received some samples, heated them in the oven, and tasted them.

All of the fried foods and skewers were of such high quality that it was hard to believe they had been frozen, and they looked just like they were freshly fried!
Now we can look forward to hearing from our customers!
